A sponge cake is a very fluffy dough made with lots of eggs, flour, sugar, and salt. Usually, no fat is used for this, with the exception of the Wiener Boden. The dough is very light and fluffy and is therefore perfect for light, summery cakes and tarts. It is best filled with fruit and quark or cream. The hardest part about the sponge cake is maintaining the airiness in the batter. Here are simple steps to make a simple sponge cake.
- Beat 3 eggs with 120g sugar for 5 minutes until fluffy. This should easily double the volume. The mass will become nice and thick over time.
- Mix 90 g of flour with salt and baking powder and sift into the egg mixture so that there are no lumps. Preheat oven to 180 degrees top/bottom heat (circulating air: 160 degrees).
- Gradually pour your mixture carefully. Brush oil or butter at the base of the pan. Pour in the batter and bake in the preheated oven for approx. 20 minutes. Run a knife between the dough and the edge of the springform pan to loosen the edge. Turn the sponge cake out onto a wire rack and let cool.
- Add your choice of icing and decorate the top specifically for any occasion. For birthdays, you can always have Naruto-themed sponge cakes by adding in Naruto figurines or other any other small Naruto items.
